      Title: Pineapple Upside Down Cake

      Yield: 1 servings

      2 tb Butter or margarine                 7    Maraschino cherries
    1/2 c  Brown sugar                         1    Box Jiffy yellow cake mix
      1 cn Pineapple slices in its own       1/3 c  Pineapple juice
           -juice                              1    Egg

  Melt butter in the bottom of 1 3/4 quart microwave dish.  Mix in brown
  sugar and mix; reheat 1 minute. Spread around bottom of casserole until
  covered. Place 7 pineapple slices on top of brown sugar; place a cherry in
  middle of each ring. In a bowl mix together the cake mix, pineapple juice
  and egg. Pour over top of pineapple rings. Spread evenly. Cover with paper
  towel; microwave on high 7 minutes, turning once at 3 1/2 minutes, Flip and
  enjoy.
