---------- Recipe via Meal-Master (tm) v7.06 Title: Broiled Spring Chicken Categories: Poultry Servings: 4 1 Fryer chicken 3lbs quartered Paprika 1/4 lb Cream cheese 4 tb Melted butter or margarine Salt and pepper 2 tb Fresh lemon juice Wash chicken pieces, pat dry. With finger, make a tunnel between skin and meat of chicken to about middle point of each piece. Divide cheese into 4 parts. Slide one piece of cheese under the skin along the tunnel of each piece. Sprinkle chicken on both sides with salt, pepper, and paprika. Place on foil-covered baking pan. Brush with melted butter and lemon juice. Place oven rack in center of oven. Broil chicken about 20 minutes on each side, brushing occassionally with pan juices, turning once, until chicken is done. Serve hot. Good served with: Buttered baby carrots, new potatoes, leaf lettuce salad. Hints: Instead of plain cream cheese, try herbed, garlic, or pepper flavor. From: THE WHO #1 @178 -----
